RECIPES
BAKED FETA PASTA
I saw the viral feta pasta recipe go round and round TikTok and Instagram, it didn’t really peak my interest until I saw Top Chef alum, Joe Sasto recreate it with olives… pshhooooooooffff mind blown. My grocery list quickly became feta heavy and I was amped to make this baked cheese delight.
TOMATO SOUP
This tomato soup is allium free, gluten-free, and dairy-free. It requires a few ingredients, your oven, stovetop, and an immersion blender. The most complicated part of this recipe is the need to use more than 1 kitchen appliance.
SWEET & SOUR PEPPERS
Wanting to try something new we decided to pick up some thinly sliced pork chops at the butcher. I turned to Gordon Ramsay for guidance and found his recipe for Pork Chops with Sweet and Sour Peppers and Onions. Here’s my spin on his dish with a few allergy-friendly substitutions.
WARM CHICKPEA & FENNEL SALAD
This salad was essentially a delicious accident. I had fennel sautéing, eyed a can of chickpeas, and tossed them in with EVOO, lemon & Berbere Seasoning. This will make a great lunch or dinner.
GLUTEN-FREE CHOCOLATE CHIP COOKIES
I’m not a baker but really want to get a solid #glutenfree chocolate chip cookie recipe in my repertoire. I tried My Gluten-Free Kitchen's chewy chocolate chip cookie recipe and it didn’t disappoint. I’ll be making these again and again.
SPAGHETTI VONGOLE
I’ve been working on perfecting my Spaghetti Vongole and think this version is pretty perfect. I always found this dish intimidating to make until I made it. It’s deceptively simple, full of flavor and requires you to use too many pots and pans but it’s worth it. This recipe is enough for two people, you can double it for more.
TURKEY BOLOGNESE (ISH)
This Bolognese (ish) sauce was born out of what we had in the fridge. The carrots and peppers make the sauce sweet and pairs really well with the ground turkey. Maple syrup may seem like a weird ingredient here but it helps balance the acidity of the tomatoes. Mangia! I hope you make this and enjoy.
BALSAMIC BRUSSELS
We went for dinner at my friend Daniela’s house one evening and she made the most delicious roasted brussels sprouts. I immediately asked her for the recipe. Turns out these aren’t only delicious but easy to make. Here’s what you need.
GLUTEN-FREE STAPLES
Must have gluten-free pantry staples, so good you'll fool people who eat gluten! I thought going gluten-free would be a full-on nightmare and I’d cry missing pasta and french bread. Well, I do miss french bread. These gluten-free brands do an excellent job of recreating the right consistency for g-free substitutes. Trust me, I’ve tried them all.
MY FAVORITE HOT SAUCES
There are so many hot sauces to choose from, how do you lock in safe varieties that won’t cause a reaction. Leave it to me! I’ve been emailing companies and taste testing hot sauces so you don’t have to. These are hands down the best garlic free and gluten-free hot sauces.
CHOCOLATE CHIP CAKE
I miss and love Entenmann’s Chocolate Chip Crumb Loaf. While this recipe is lacking the crumbs (working on that) it’s taken me 4-5 bakes to finally get this recipe right. Yes, we’re using a pre-made cake mix but we’re completely ignoring the directions and changing the ingredients to make it even better!
PANTRY PERFECT SPAGHETTI
This recipe is equal parts farm and pantry. We picked up cherry tomatoes and mozzarella from the farm and paired them with all of our favorite garlic free pantry staples. This dish is simple, filling and easy to make for a hearty vegetarian meal.
GLUTEN-FREE PANCAKES
Check out these gluten-free beauties! I’ve tinkered with gluten-free pancake recipes over the years because g-free pancakes can be a lil mushy and not that great. Fast forward to me finally locking down the perfect recipe. I hope you love these!
