GREEK SALAD WITH CHICKEN
I wanted to re-create one of my favorite sandwiches from college, on Northeastern’s campus there was greek food cart owned by the nicest guy. He made delicious Greek salad sandwiches wrapped in freshly baked pitas. I honestly can still taste how good they were. Our grocery store was out of pita so I improvised with quinoa. I wonder if this cart is still on campus?
INGREDIENTS
4 boneless skinless chicken breasts
1/4 lb of Greek or French Feta
Fresh Dill & Oregano
1 tbsp Poultry Seasoning
1/2 Pint of Cherry Tomatoes
2 Small Persian Cucumbers
Salt + Pep
1 Lemon + Extra Virgin Olive Oil
Quinoa
GREEK SALAD WITH CHICKEN
FOR THE SALAD - Quarter the cherry tomatoes and slice the cucumbers into rings. Put them in a bow with a few sprigs of dill, oregano, salt, pepper and lemon juice. Let this sit while you prep the rest.
FOR THE CHICKEN - Dice the chicken into bite sized pieces, season with 1/2 a lemon, poultry seasoning, salt, pepper and olive oil. Sear the chicken in a sautee pant and cook through.
Plate the quinoa or lay out a pita and place the chicken, salad and a hunk of feta on top. Drizzle with a little evoo, maldon sea salt and dig in!
