MUST MAKE HUMMUS
Finding a garlic-free hummus would be like finding a unicorn, I've never seen one at a restaurant or in a store. There may be “sweet” hummus varieties made without garlic, but hummus isn’t meant to be sweet. I was determined to figure out how to make the best garlic-free hummus. After reading tons of recipes, tinkering with different techniques I landed on, what I think, is the most delicious hummus. I often bring this dip to house parties or game days, and I'm always asked for the recipe. Funny how no one misses the garlic 😉This simple side dish requires very few ingredients, the real star of the show is the brand of tahini you use. I've found Al Wadi makes the best tasting Tahini resulting in delicious hummus! I promise if you follow my steps, you’ll never make hummus differently!
HUMMUS
PREP TIME: 20 mins
SERVING SIZE: 4-6 servings
INGREDIENTS:
1 can of organic chickpeas
1 cup of ice water - fill a measuring cup with ice and water
1/4 cup of chic pea liquid from the can
Juice of 1 lemon
2-3 tbsp of Al Wadi Tahini
2 tbsp Organic Extra Virgin Olive Oil
1½ - 2 tsp cumin
2 tsp Kosher Salt
HOW TO MAKE IT:
You’ll need a food processor or a blender to make the hummus
Drain and rinse the chickpeas - reserve 1/4 cup for the hummus
Put the can of chic peas in the food processor
Add the juice of 1 lemon
Add 2 tbsp of tahini, you can alway start with 1 then add more
Pulse the chic peas until they are split and start to breakdown
At this stage add the cumin, a pinch of Kosher Salt and EVOO
Now you’ll need the ice water in your measuring cup, I can’t stress how important ice water is for the next step in making this hummus outstanding! Throw the food processor on low-medium and start slowing streaming in the ice water until the chic peas begin smoothing into a traditional hummus texture.
Taste your hummus. Does it need more tahini, cumin, salt or lemon? Maybe it needs all 4 things. Add a pinch, a dash a spoonful more. Then blend again.
Does it look a little dry? Steam in a bit more olive oil and the reserved chic pea liquid.
Taste and transfer to a bowl. I like to drizzle organic extra virgin olive oil on top with a sprinkle of Za'atar seasoning.
