When you salad finds the good light, she shines. Salads are never boring when you have a delicious variety of ingredients. This is my go-to simple tuna salad. You have to prepare the beans and tuna but it’s so worth it. Let’s make it!

TUNA & WHITE BEAN SALAD

PREP TIME: 20 mins

SERVING SIZE: 2 servings (can be 4 if you add another jar of tuna)

THE INGREDIENTS:

Marinated White Beans:
First let’s marinate the white beans. Drain and rinse the beans. Place them in a bowl and toss them with extra virgin olive oil, red wine vinegar, dried basil a dash of honey and salt n pep. Toss the beans around and set them aside.

For the Tuna:
Throw out your cheap canned tuna and get a high quality brand. We love @serratsconservas 🐟 Drain some of the oil, add the juice from half a lemon, dijon and a little mayo. Mix and set aside.

Clean, dice and slice the items below and put them in a bowl with Extra Virgin Olive Oil and Balsamic Vinegar and enjoy!
