SABICH LITE™
I was craving the flavors of Israeli and concocted what turned out to be a dynamite sandwich, I’m coining Sabich Lite™ since it isn’t really a Sabich sandwich but gives the essence of one. A traditional Sabich sandwich has fried eggplant, soft boiled eggs, tahini, hummus, cucumber, tomatoes, cumin, and za’atar. Being that we’re on lockdown in NY this is how I fed my craving.
INGREDIENTS
Gluten-free brioche buns from The Gluten Free Bakery
4 soft boiled eggs
Red Cabbage *recipe for this below
Cherry Tomatoes
Za’atar Seasoning
Lemon
Olive Oil
Apple Cider Vinegar
Honey
Trois Petits Cochon Cornichon
SANDWICH RECIPE
Toast the gluten-free brioche buns
Lay the cabbage on one side top with tomatoes
Slice the eggs and place on the opposite side dress with evoo, Za’atar and salt
Toss in some cornichons and a dash of hot sauce
Slap it together slice and enjoy!
CABBAGE RECIPE
Slice 1/4 or 1/2 a head of head cabbage very thin
Toss in a bowl with the following. The longer it site the better it gets!
2 tbsp Primal Kitchen Mayo
1 tbsp apple cider vinegar
Juice of 1 whole lemon
1/2 tbsp honey
A liberal amount of Diamond Crystal Kosher Salt
A few cracks of pepper
